A US Citizen. Educated in New York. Entered the foodservice industry (purchasing) in New York and now has 30 years’ experience within the industry. Upon relocating to Florida in 1971, helped start equipment and supply division of Henry Lee Co, and developed their export business in the Caribbean. Began supplying customers in the Cayman Islands in 1972. Founded Island Supply Co Ltd. in 1987 and acted as President of the company up to its merger with Jacques Scott Group Ltd. in 1999.

Scottish. Educated at University of Glasgow and University of Miami. Joined Island Supply Co Ltd. upon receiving his Bachelor’s Degree in Accounting and, over the past seven years, has been instrumental in the growth and development of Island Supply Co Ltd’s purchasing office in Coral Springs, Florida. His responsibilities include purchasing, sourcing new products and vendors and developing sales in territories outside the Cayman Islands.

Originally from Ireland, and now Caymanian, Dermot has over 30 years in the foodservice industry. Arriving in Cayman in 1989 and working in various Hotels and Restaurants, Dermot joined the Island Supply team in 2005. As Sales Manager, Dermot is always looking for the next new items that Caymans discerning Chefs from around the globe demands. It is the ability to get out and meet new people from different cultures from around the world is what he enjoys most about his job.

Originally from England, and now Caymanian, Chris was a Restaurateur with 34 years in the foodservice industry, the last 21 years working in various Foodservice capacities with Island Supply. Now heading up the Service Division, Chris Manages a Team of five Trained Foodservice Technicians. Chris enjoys a challenge and gets to enjoy solving problems in this role.

Brian has been in the Cayman Islands since 1999 and has over 25 years’ experience in the Hospitality Industry. Originally from Sault Ste. Marie, Canada, Brian made the transition from Hospitality to Food Service joining the Island Supply Team in 2010. Brian is HACCP Certified and enjoys assisting in the day-to-day quality control, which Island Supply prides itself in. Additionally, Brian is the Island Supply Chemical Specialist handling, Warewash, Laundry & Janitorial needs.

Canadian national that has lived in Cayman for 21 years, has been in F&B sales for the last 18 years and has worked for Island Supply for the past 1-1/2 years. His responsibilities are day to day servicing of his customer list and assisting in the dairy purchasing programme.

Dan, originally from Edmonton, Canada, is passionate about food in general, whether it’s sourcing it, suppling it or preparing it. Dan has been in Cayman for 21 years, when Dan first arrived he was employed at Hooks, where he say he did ‘everything’ from manager to chef. These days Dan saves the cooking and baking for his three children. We eat a family meal most nights and everyone chips in, it’s definitely getting easier than when they were younger. Dan enjoys helping people run successful businesses, whether it’s sourcing equipment or food. The industry is ever changing and never a dull moment, it’s great the day flies by, sometime you come up for air and the day is done. The job is good but it’s the people that I work alongside and meet that really make it great.

Mick is originally from Wexford, Ireland and has spent the last 25 years working in the hospitality industry here in Cayman. Since starting with Island Supply he has enjoyed broadening his knowledge and skills in the equipment and installation aspects of the food service industry. Mick is the sales representative for the Sister Islands and has enjoyed working with the resorts and restaurants there for the past 14 years. He has built a vital working relationship with the various companies & individuals involved with keeping the islands supplied. He has to be more resourceful there are certain challenges that you get when everything is shipped via barge, the weather can play a major role depending on the time of year. Married with two Kids he enjoys a Family life with a strong involvement in various sports here in Cayman.

Originally from Jamaica, Paulette has spent the past 32 years in Grand Cayman and has been part of the Island Supply team for over 20 years. A senior Sales representative, Paulette is key in promoting Island Supply’s range of eco-friendly products. Due to the regular training courses she attends, Paulette has a thorough knowledge of how different chemicals can be detrimental not only to the environment but also to the health of those who are regularly exposed to them.
